I would like to set the Excel 2011 menu and ribbon so that they are similar with Excel 2007. Is this possible? Also, is it possible that the commands in Excel 2011 be accessed in the menu options aside from the buttons and ribbon?

You may not be able to make Microsoft Excel 2011 look and feel exactly like Microsoft Excel 2007. The two platforms may have a similar user interface; they are still different from each other. This difference actually sets them apart.
You can definitely access all commands on Microsoft Excel 2001 via the menu options. It works just like it did on Microsoft excel 2007 and 2008. There would be not much of a difference. You just access it the same way as older versions of excel. The ribbons and buttons were just added to make it a little bit more faster to access them.
