Here are some simple instructions to copy the text of a jpeg file:
1.      Open the location of the Jpeg file.
2.      Open Microsoft Office OneNote and Microsoft Office Word.
3.      Select the Jpeg file the drag and drop it to the Microsoft Office OneNote.
4.      On Office OneNote right click on the image then select ‘copy text on picture’.
5.      Lastly paste it in the Microsoft Office Word; you can now edit the text in Office word.

Aside from using OneNote, you can opt to use the JOCR reader software which acts like Windows 7's Snipping Tool, except that it extracts text. You can google the download site in Google, it's free. When you get the application, install it and pin it to the taskbar. Now, everytime you need to get the text out of a picture, you can simply click on the JOCR icon and click "capture region". Drag and Select on the area you want to read. Click on "Recognize" and you have the text on the clipboard. Go to word and paste the text. Then you are done!
