Back up copies that are off site on a Windows server?

Can we use shadow copy to back up copies that are off site on a Windows server? If yes, where are they stored? Can they be copied manually and is it possible to restore from them? Will it be a security issue?

Back up copies that are off site on a Windows server?

Shadow Back up or Shadow Copy is a technology included on Microsoft windows. It is the one that allows manual or automatic back up of data. You can definitely used backup copies that are off site from the Windows server. You may need to check with your Infrastructure Team as they would be able to advise you if they do have the data back up on their end or if they use cloud network. Usually, the Infrastructure team will look for the file for you then they would copy it in your folder or drive so as to not breach security.
