There are various models of Nokia phones available in the market which uses symbian as the OS. So you have to mention the correct model you are using.

For an example in Nokia S60 and other S60v3 Phones you have to go to; menu > tools> stinting> connection > access point > select button to open option > select advanced settings and add proxy details and port number (for the proxy this is your IP address and port will be 80 or 8080).
