In Illustrator Artboard  is the space that holds your artwork . so if you want to set your  Artboard size then go to File-Document Setup-Artboard, and in the newest version by double clicking the Artboard Tool. Or if you want to custom the  size of  Artboard to match the size of your work then go to menu Object – Artboards – Fit to Artwork Bounds.

Now if you want to change your Canvas size , follow the following steps:-

1.   First open your file.

2.   Now go to Document Setup and a dialog box will come. On this box change the unit to inches and then click on Edit Artboards.

3.   The Artboard Panel will come where you can now change your canvas size.

Put your desired size by typing on the width and height columns in the box.

4.   There’s  also another option— click on Presets and then go tot Fit to Artwork Bounds.

In Adobe Photoshop and Adobe Illustrator, the “canvas size” is the entire size, dimension, or resolution of your image. For example, if you will create a new image with 1366 x 768 screen resolution, it will have a document size of about 18.972 x 10.667 inches.

Adobe Photoshop canvas size

The canvas size is the document size or the total size of the width and height. If you are editing an image, you can resize it in two ways. You can set new values for the width and height in the document size and this is the canvas size. Another way is to set new values for the width and height for its pixel dimensions or the image size.

So basically, resizing an image can be done by Image Size and Canvas Size. The canvas size is your image work area.
