Most of the files we are uploading for SEO purposes is on PDF file. Will that impact our sites rank or we need to change it to a text file first?

Firstly, you have to consider that, which is the most effective for the Google because your main objective is to display your website pages on the Google site before all internet users.

Normally text with links is the most fruitful for Google. So you should use only text that includes many links within the text.

So, in your website every page should contain plain text and within the text lot of words or phrases should be used that is linked with other pages.

This type of text or writing is found quickly. If you feel mandatory to upload a PDF file then use important keywords that are frequently searched by your target users.

To do this go to Google ad words where you will get keyword search option. Before going there make a list of keywords that is mostly related to your business or site.

So, try to use plain text with more links and have your website pages on the first page of Google.
