I would like to use vmware ace 7. I need clarification regarding accessibility of host device by using vmware ace 7.  All my employees are using different OS in their respective desktop. So by using VMware Ace 7, is it possible to give access or deny access to their system devices such as printers/ USB's, according to their seniority /grades in the company?

You are correct. VMware Ace 7 has the capability to deny or give access to USB ports and other devices on a host computer. It allows you to configure what devices and applications can be accessed by the user.
