There are many differences that involve the Exchange 2010 and Exchange 2007.

Let me itemize them for you

STORE GROUPS in Exchange 2007 you are allowed to have 1-50 store groups but this was already discontinued on the 2010.

MAIL BOXES in Exchange 2007 you are allowed to have 1-50 while in Exchange 2010 you are now allowed to have 1-100 Mailboxes depending if you are getting the enterprise or standard server

SINGLE COPY CLUSTER was allowed in the 2007 Enterprise server but it unavailable in the 2010 exchange server

The SCR, LCR, CCR, SINGLE INSTANCE STORAGE, ESE are all available in the 2007 exchange server but not available on the 2010 servers

DAG (Database Availability Group) is present in the 2010 exchange servers that were not found in the 2007 servers

The VSS is still available for both servers, while a change in the MAIL RECOVERY is implemented.  On the 2007 server they were using RSG while in the 2010 server they now applied RDB

PUBLIC FOLDERS are automatically created in 2007 while it has to be done manually on the 2010 exchange server

As for the DESKTOP CLIENTS the 2007 supports outlook 2003, 2007 and 2010 while the 2010 exchange server only supports Outlook 2007 and 2010. And the connection between client and server is done via mail server on the 2007 and on the 2010 server it is now via Client Access Server
