In IOS versions previous to the Mountain Lion X apple rendered the dock component such that it could be changed but in this Operating system version apple rendered the dock such that it cannot be changed.
So what you can do is to Downgrade to the Apple Lion version to change your Apple dock or you can wait until a third party App like the CandyBar comes up which would help in changing the dock.
Currently no such third party app exists.
