It can be done through two ways. Using the converting software or using YouTube audio converter add-on you can get the audio files. You can use any video to audio converter with your selected setting of output.

You can download audio converting add-ons by which you can download directly from YouTube the audio versions of video files for Mozilla or Chrome from Internet.

You can convert YouTube videos into high quality MP3 format at rate of 128 k and 64 k rates. Just install a freeware Firefox plugin Easy YouTube video download 

https://addons.mozilla.org/en-US/firefox/addon/easy-youtube-video-download/.

It will add extra button under each video which will allow you to download MP3 converted videos.
