How to do I configure exchange email spam filter? What all things I should know before doing so if I want to reject a particular mail.

Using the Exchange Admin Centre (EAC).

In EAC, traverse through protection and then spam filters.
Locate the spam section and then select the high confidence spam.
After this step, you get to choose what action needs to be taken, either to delete it directly or to transfer them to the junk folder.

You have the option to tune these spam policies by detecting the false positives and negatives.
