My client needs to have his files from his 50+ domains managed through Plesk (which uses Apache and MySQL) migrated into a development site that was created on a Sphinx server with a PostgreSQL database.

Will there be conflicts with Apache if I install Sphinx separately, like over port 80 or something?

It is a general practice that you don't install both on a same server as they server the same purpose and almost use the same resources. So if they are installed together then there will be a problem that who is going to use a resource if both of them needs it.

There are few things that you need to be certain that how much work will you be doing on each one of them. Then you can configure them according to your own case.

As for your question regarding the existence of both on a same server with the port 80, yes they can exist because in the documentation of sphinx, it is clearly stated that the default port that is being used by it is 9312 instead of 3312 from the older version.
