Please let me know what I need to do before our domain controller is upgraded to Server 2008 R2. What are the reasons on why Windows 7 should not be skipped instead of upgrading directly to Windows 8? How does server virtualization works?

Before upgrading you should read the documentation on the Windows Server 2008 R2 to ensure that you do not take an unsupported upgrade path. For example, it is not possible to upgrade to Windows Server 2008 R2 from Windows 7. It can only be upgrade from a server edition of previous Window OS.
