Can somebody suggest how to use phone monitor options android to record the conversations and save them as a .wav file on the listening device?

The phone monitor options vary according to the model of the phone. Each phone maker has different phone monitor options. HTC will have different phone monitor options and Sony will have different phone monitor options.
Thus, each maker has different options to choose from. If you want an app that will be common on all android phones then you can try the following:
