I know that when you block someone of FaceBook, they will no longer show up in your search history. My question is if you unblock that person, will they start to show up in your search history again?

In Facebook, when you block someone, you or your account is completely cut off from the person’s account. This means you will no longer see that account on your news feeds, in friend suggestion, in search, mentions, comments, and so on. Even if you try to search for that person or account, it will never appear in the results.
