Backups in iTunes stores the data on your PC or Mac, so the capacity of your PC decides the amount of data that you can backup. iTunes also offers encrypted backups only when opted, by default, they aren't encrypted. Attend backup doesn't include pay information and settings, touch id settings, pdfs downloaded to iBooks, App store content, synced content from various sources such as mp3 or CDs. Backups in iCloud need a wifi network connection and offer up to 1TB of storage. It's a paid service, with the first 5GB free. The backups are always encrypted, hence more secure. They don't include touch id settings, Apple pay information and settings, data stored in iCloud already such as calendars, contacts as well as other cloud services like Gmail, App store content.
